Each Slice Cut to Bring Out Wagyu Flavor

From Kuroge Wagyu to our other meats, each slice is cut in-house to suit shabu-shabu. Swish it briefly through the hot broth and enjoy its tender texture and rich, savory flavor.

Seasonal Japanese-Grown Vegetables

We select Japanese-grown vegetables that pair especially well with shabu-shabu. Through our seasonal “production-area relay,” we switch sourcing regions throughout the year so you can enjoy the natural sweetness and texture of the vegetables as well as the meat.

Standard Course

An all-you-can-eat course featuring selected chuck eye roll, beef short plate, Sangen pork, and Japanese chicken. A great choice for first-time shabu-shabu diners, with meat and Japanese-grown vegetables to enjoy in your choice of dashi broth.

Wagyu Beef Course

Enjoy Kuroge Wagyu in addition to everything included in the Standard Course. Swish the Wagyu briefly through the hot dashi broth to savor its tender texture and rich, savory flavor.

Wagyu Beef Premium Course

For those who want to indulge in an even more luxurious Wagyu experience. Enjoy both marbled Kuroge Wagyu and Kuroge Wagyu in this premium course. The fine marbling gently melts into the hot broth, delivering the rich flavor expected from our top-tier course.

Third-Generation Kiwami Dashi Broth

A distinctly Japanese broth combining seafood umami, white soy sauce, and artisan-prepared bonito flakes. As the steam rises, the aroma of bonito fills the air while the broth gently brings out the natural sweetness of the vegetables.

Wagyu Dashi Broth

Aromatic vegetables are slowly simmered before adding the rich umami of oxtail and Wagyu. Fragrant, full-bodied, and especially recommended for those who want to savor the deep richness of the meat.

Sukiyaki-Style Broth

A Japanese-style broth with a rich sweetness made from tamari soy sauce and brown sugar. As the meat cooks, its savory juices blend into the broth. Enjoy it together with the raw egg served on the side.
